Alessandro was born in Sicily, a professional chef who has worked across the globe finding his home and family in Australia. Serving a distinguished career under some of the best chefs across Sydney, Alex has taken the reigns at the Rose of Australia to bring his love for food to your table.
He has a love of quality local produce and traditional preparation methods. Think of large family gatherings surrounded by people where the food is an expression of love as much as a culinary experience – he brings this from his family to yours. From homemade bread, infused oils, cured meats, pickled vegetables and handmade pastas.
You will find him enjoying a burger as much as the pop-up Italian ala carte experience. Alex is on the floor and is hands on in his kitchen inspiring his staff to deliver the experience that keeps you coming back.
